Thai Baked Sweet Potatoes


8 medium sweet potatoes


2 cans chickpeas

2 tsp garlic powder

2 tsp cumin

1 tsp ginger

1/2 tsp ground coriander

2 tbsp maple syrup

2 tbsp soy sauce

1 tsp chili garlic sauce

1 tbsp coconut oil

{ginger tahini sauce}

2 tsp fresh ginger

1/2 cup tahini (or peanut butter)

4 tbsp lime juice

2-4 tbsp liquid aminos

4-6 tbsp maple syrup or coconut sugar

1 tsp chili garlic sauce

2-8 tbsp hot water

{garnish} optional

4 green onions, diced

1/2 cup cilantro finely chopped

1 lime

1 tsp chili garkic sauce

2 tsp sesame seeds

Preheat oven to 400. Rub sweet potatoes with oil. Place on a foil-lined baking sheet and bake for 25 min until tende

Heat a skillet of medium hear. In bowl combine chickpea ingredients

Once skillet is hot, add coconut oil. Saute chickpeas until brown and slightly dried.

Prepare sauce except water to same bowl ised gor chickpeas. Whisk to combine. Add hot warwe until thin.
