Garlic Broccoli Stir Fry with Chickpeas

Broccoli Stir Fry:

1 tablespoon oil (*see recipe notes)

1 onion diced

5 garlic cloves minced

1 heaped tablespoon fresh ginger minced or 1/2 tsp ground ginger

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon smoked paprika

Black pepper & sea salt to taste

Pinch of cayenne pepper

1 large head of broccoli cut into small florets

1 (15 oz) can of chickpeas rinsed and drained

1 cup rice


6 tablespoons liquid Aminos

1 tablespoon rice vinegar

4 tablespoons maple syrup

Optional toppings:

1 can water chesnuts

1 bag bean sprouts

1 cup of roasted cashews

cooked tofu


Prepare rice

Cut broccoli in small pieces. Cook on stovetop or oven until soft but not mushy.

Heat oil in a pan over medium heat. Add onion snd cook until is begins to look translucent. Add garlic and cook for 1 min. Add and all spices. Sauté for 1 minute or until combined.

Meanwhile, prepare the sauce: In a medium bowl, combine water, soy sauce, vinegar, maple syrup, and Whisk.

Pour the sauce in the pan with the onions and add chickpeas and cook for a few minutes.

Combine everything excrpt rice.

Serve alone or with cooked rice. Enjoy!


Please note that restaurant stir fry recipes contain a lot of oil. If you aren’t used to low-fat cooking, you might not like this healthier stir fry version. If you don’t mind oil, feel free to add more oil to taste.
