Vegan Fajita Recipe! ๐Ÿ‡ฒ๐Ÿ‡ฝ๐ŸŒฏ๐ŸŽ‰

If youโ€™re looking for a delicious vegan fajita recipe, here it is!!

Ingredients:

(1) Red bell pepper

(1) Green bell pepper

(1) Purple onion

(1) Stalk of Broccoli

(1) Sweet Potato (optional)

(1) Cup Shredded carrots

(1) Stalk Cauliflower

(1) Tbsp Chili powder

(1) Tbsp Garlic powder

(1) Tbsp Onion powder

(1) Tbsp Smoked paprika

(1) Tbsp Parsley

(1) tsp Cumin

Avocado Oil

Directions:

Chop all veggies like a boss!

Heat avocado oil in skillet

Add peppers to skillet and sautรฉ, but stop before theyโ€™re soft.

Add onions to skillet and sautรฉ until they are slightly crunchy, but not too soft (you know, right before youโ€™re like โ€œdang it! I canโ€™t find the onions anymore!! ๐Ÿ˜ฑ)

Give the onions and peppers some alone time, but assure them youโ€™ll be back.

Next, add a little oil, and once hot, sautรฉ broccoli for approximately 10 minutes on high, tossing to cook evenly (toss it, but try to get it to land in the pan). ๐Ÿ˜ฌ

Add cauliflower and cook until roasted on the edges. 

Add other veggies back in (party time!! ๐ŸŽ‰๐Ÿ™Œ) and make them all mingle (stir). 

Form a square with the veggies (you must measure to make sure all sides are equal..use a ruler! ๐Ÿ˜‚) then add the following spices on top (they like it on top ๐Ÿ˜ณ)

(2) tsp chili powder

(2) tsp onion powder

(2) tsp garlic powder

(1) tsp turmeric powder

(1) tsp parsley

(1) tsp cumin

(1) tsp salt

(1/2) tsp pepper

(1) Tbsp Xylitol (or sugar, or agave nectar, or corn syrup or coconut sugar, or monk fruit or syrup or brown sugar or just put your finger in it to sweeten)

Add 1/4 cup of water on top of seasoning and stir until your arm is killing you!

Once everyone is getting along, remove from heat and add to burritos or tacos or make nachos! Dinner!!
